Baked Haddock Recipe
Ingredients:
Haddock Fillet or other white flaking fish like Cod : Note, when I purchase my Haddock fillets, I asked for the fillet to be skinned, if it has not been done so already.
Mayonnaise
Crackers (Such as Ritz, Keebler Butter Crackers, or the like)
Butter - Melted
Seasoning if desired
One whole lemon
Pre-heat oven to 350 degrees or (175 degrees celsius)
Rinse the fish in very cold water ,while checking for any small bones that might have been left. After that is done, pat the fillet dry with a paper towel then place it on a sheet pan or cookie sheet atop parchment paper.
To create the cracker crumb topping, finely crush the crackers in a bowl, then depending on the amount of crackers crushed, add enough melted butter bind the crumbs. If desired seasoning can be added at this time. I have used Lemon Pepper, salt, pepper, garlic powder, onion powder, and herbs like parsley, thyme.
Brush the fish fillet with mayonnaise, which I feel helps so keep it moist and also helps to keep the cracker crumbs in place
Once the mayonnaise has been added, cover the fillet with the cracker crumb topping. I like to cover it completely, making sure no fish is showing, but you can certainly use just a little bit if that is what you desire.
Follow with a little fresh lemon juice and top with thin lemon slices
Haddock should be baked at 350°F (175°C) for 15-25 minutes, depending on the thickness of the fillets. Generally, 15-20 minutes is sufficient for thinner fillets, while thicker ones may need an additional 5 minutes.
The fish is done when it flakes easily with a fork and is opaque white, hence the reason most of my fillets are served with at least one fork mark from checking ;-)
